    oh! i made this today, but i couldn’t get any plain or greek yogurt near me, everywhere was sold out. so my tza tziki came out too sweet, but pretty good. i have a recipe for lamb shoulder so i want to try it with that!

    An other beautifull idea is to replace the yogurt with goat cheese or even beter katiki (a greek variety of goat cheese wich looks like cream cheese). Yes it is a defrent recipe but soooo worth it :)

    In that Wikipedia article, “dza’dzici” is the pronunciation (actually, one of two alternatives), not the spelling! The spelling in Greek is “τζατζίκι”, which is always Romanized as “tzatziki”.

    the correct term is ja ji ki, from a Greek, who never left Greece, and eats it daily :)

    it can stay for about 4-5 days…when it goes bad, you can’t smell it, but you can taste it, and it will taste very sour.

    Simple steps
    1. Use strained yoghurt only.
    2. Put the cucumber on a plate, tilted to the side, and the water will flow downwards, no need for salt.
    3. Mix the yoghurt, the cucumber and the garlic.
    4. When mixing, add olive oil, vinegar and salt. Always taste and mix, until you achieve the desired taste, texture and acidity.
    5. There is an argument about using dill or spearmint. I personally use dill, it just tastes right.
    6. Don’t put pepper or lemon.
    7. Always serve cold.

    the best tzatziki, and the hardest to make, is with goat milk strained yoghurt. If you find it, I strongly recommend its use. If not, you can put the goat yoghurt in cloth (like a pillow case) and then hang it, and the water will slowly drain. It takes time, but it worths it. Always remember: Water is bad. Tzatziki must be completely drained from water, or else it becomes a gooey paste. The serving method, is laying it on a flat plate, with olive oil around, and an olive in the middle.

    I am Greek and believe me it is not ja ji ki it is in between tza tzi ki and dza dzi ki. T is pronounced a little harder in greek and to an english ear it can sound more like a D.

    Where in greece do people call it ja ji ki? I speak greek and I know of no J sound in the Greek language. The greeks say Tzay not Jay the sound is TZ.
